美洲螯龍蝦即俗稱的波士頓龍蝦，分布於大西洋的北美洲海岸，特別是加拿大海洋省份，也是美國東北部的名產，具有重要的商業價值，被認為是極名貴的海鮮食物。

肉質甘甜的波士頓龍蝦，不只鮮紅外殼中有著鮮嫩彈牙的肉質，低脂、低膽固醇更是其最大的特色，剝開外殼即能看到雪白滑嫩的龍蝦肉，光看就讓人忍不住流口水！

  
汆燙法

簡單也最傳統的烹煮方法!將龍蝦清蒸或是放到加鹽的水裏簡單地煮熟，再裹上蛋黃醬或者奶油後食用，最能吃出龍蝦原始的鮮甜滋味。醬裏可以加檸檬、大蒜或新鮮的香草料，風味更佳。

另一種傳統的做法是將龍蝦縱向切成兩半，送進烤箱放入起士粉等醬料~就成了焗烤龍蝦了！
